I have done similar and all went well. You may not be able to check them all the way if one of the connections are overnight and it is not last flight in and first flight out.

You should be given a sticker at BKK to wear on you shirt to indicate you are an international pax. When you disembark at HKT you will be directed to the immigrations desk.
