If you want to play that game, just don't check any luggage, as the airline may well refuse to release them to you in AMS and tell you you have to collect them in France.
If you have a tight connection, asking them to short-check to AMS is tantamount to openly declaring that you will not fly the last leg, which is asking for trouble as they may reassess and charge you for one-ways, which is bound to be substantially more expensive.
