Indeed, but the beauty of the EU is there are always different interpretations. I transferred recently through Copenhagen Airport - and they do not do security again for transfer pax. So a person bringing in a bottle would have no problems on the connecting flight...
the problem does not happen in CDG as well if you just transfer. However, if you enter Schengen in CDG you will have to go though security again. So a Whisky on DTW-AMS-ZRH should be ok, but not on DTW-AMS-STR.
