On the Duty free subject, I've never come into IAH internationally so I don't know, but my guess is you'll have to clear security again (if its like EWR). So what I'd do is simply stuff the duty free booze into your bag before you re-check it. I've done this in China (where they also have a no booze through security rule) and it worked out quite well.
