How about Australia? Some great hotels in Sydney and NSW, then perhaps head north for The Barrier Reef.
Perhaps this is from a UK perspective, but back when I was selling travel, amongst the most frequent requests I had were for:
Indian Ocean twin centres: safari + beach
Maldives was a popular option.. you could get 2 weeks inc flights from UK IRO £2000-£2500pp. Obviously you can spend any amount.
Santorini, Greece. IMHO very romantic and stunning scenery.
Thailand - some great hotels and very reasonable. Also, easy to get a multi-centre, taking in trekking in the north, the city of Bangkok and the beaches in the south.
Cruise - Hawai'i / Caribbean / Alaska. Good value and, again, seemingly a romantic option. Most people would combine with a stay, particularly in Hawaii.
Morocco - stunning hotels with a destinctly "exotic" feel.
Lake District, UK. Surprisingly, did quite a few of these. Some good hotels, and nice scenery.
