On a recent sold-out LAX to SAN Eagle flight, the gate agent had to remove 2 passangers due to weight restriction. The odd thing is that they selected the last 2 people to board Vs maybe luggage/cargo. The weather was pretty good with no wind/rain issues that I could see (not a weather expert by any means). So why do Airlines not buy planes or retire the ones that can't fly with all seats taken and full luggage?

Doesn't have anything to do with large passengers, unless you and all the other pax were required to get on the scale at checkin. Weight restrictions are more related to temperature and humidity than wind and rain. There was a good thread on here a few months ago on this topic - search should turn it up pretty easily.
