I might be wrong, but I thought the reason is this - flight STDs and STAs are in the BA computer in GMT. So if the flight departed at 1900 EST, it would be 0000 GMT. Might cause a bit of confusion as 0000, so it is 0001 instead.

Probably the most inarticulate explanation ever.......
