I was gonna say, I wouldn't try such a trip with my Mom using coach, at all. It can be very grueling for Seniors, particularly if there are multiple stops at hubs and no lounge access, to boot.
I guess your Mom must be very active and tough! Or Dutch.
Given St Louis/Dublin/Milan... your options are limited without adding more transit stops in the US and/or using LHR/FRA. Basically, I'm seeing AA or CO.
Unfortunately, She probably won't be allowed to sit in an emergency exit row ( more legroom + person in front can't recline their seat into her lap )...
...so suggest strongly getting a bulkhead seat nearer to WC's and to simplify de-planing. FA's are usually very helpful in re-organizing such... particularly if they have friendly passengers that don't mind moving for a Sr.

P.S. Be aware in your budgeting that Dublin has gotten much pricier as a tourist destination over the years.
