As far as I know, the rules are "only one cert per stay".

Even by making two separate reservations, it will still be one stay. Maybe you can try to make one reservation in your name and another reservation in your fiance's name, but if you stay over two weekends I think it would be better to contact the hotel directly (not Amb helpdek) and ask.
