Well then - scratch Dubai. Spend a day in Frankfurt
SFO-FRA - stop in FRA for a day. Would recommend you take the train over from FRA airport to Mainz, it is half an hour away by train (or not much more than that by taxi). Try the hilton mainz - right by the rhine, walking distance from the old town square, gutenberg museum etc.

Then on with your itinerary. That way you only spend the one day you'd have spent in DXB .. and it still counts as a stopover. The next two stopovers are those you'd have to do anyway, MAA and SIN.
