Because they have sold out of the inventory for A-C already whilst A-B and B-C are not sold out.
When it comes to this, ignore the fact that it is the same plane; just consider them as 3 discrete flights

Each flight has its own inventory. If the flight has availability in the class you wish to purchase, then you can book it. BA is not the only airline to do this. I have come across similar probs; e.g. I wanted to book LHR-SIN, but there was no availability, however there was availability on the same plane if I wanted to do LHR-SYD
