I have never taken this route in the winter. But personally, I think it will be as scenic (if not more so ^ ) when covered by snow!
The only possible "problem" is that with the early sunset (4:30 - 5), going eastbound (assuming the CZ is on time - which it may not be

), it will get dark around Fraser - Winter Park. The segment between there and Denver is one of the "hidden treasures" - as most of the route is inaccessible be roads (and can only be reached by rail)! (Going westbound, it is done mid-morning.)
