I was sitting in F -- 1B to be exact -- on a NW flight a week ago when a 90-or-so-year-old woman boarded. She had a cane and needed help getting in the plane. I quickly offered to trade my seat for hers and I didn't even know where it was.
Turns out they found room for her in a bulkhead seat and they didn't want or need me to move, but the FA's were amazed I would be so nice about it.
On the kid issue -- I have a 2-year old and obviously I can't be separated from my child, so I would just dump it in the FA's lap if I was a parent in this situation. I am only in this situation, though, on a last minute change or other strange ops situation as I always plan my seat assignments very carefully.
