We loved their GOOD PIZZA so much that we have endlessly given them the benefit of the doubt and tried again and again over the last couple of years. We finally threw in the towel last month. I get so frustrated because even CHAIN PIZZA restaurants are typically consistent....so why can't this place be? They've been there for 15 years and people are always lined up to get pizza.
I'm sorry to hear that your local place is so inconsistent in bad ways (description snipped for length) but honestly, some inconsistency is a good sign.
Chain places are usually (in my experience) more consistent because they've got very "industrial" processes for making the pizzas, and a very well organized supply chain. So it would stand to reason that they're consistent... that and their ubiquity are about their only inherent merits.
Meanwhile, if inconstency ranges from "merely good" to "great" (obviously not the case there) it can give character

and most of my favorite NY-style places have some noticeable variation.
