I believe that when you see an SSID of "applexxxx" at a hotel it is someone who has brought their Apple AP with them to the hotel so they can be wireless in their room. In that case I always attach to that SSID to get free service. But if you attach to any public SSID you should run a layer 3 VPN to protect your data.
