I had a similar pizza experience. I lived in Silicon Valley for seven years and used to go to a Uno''s in Sacramento to watch Cubs games but the pizza was not the same as in Chicago. I attributed it to an attempt to try to make the pizza healther and more palatable to the Californians or to the use of California cheese, which I thought was bland compared to Wisconsin.

The best in Sacramento (and my all-time favorite anywhere, for that matter) is Zelda's on 21st. A hole in the wall place, cash only business (which is a hallmark of a successful pizza restaurant) and always a wait, this place serves up traditional pies on a dense, short, cornmeal crust.
