I personally know of a whole joint US/Israeli citizenship family that went to Dubai for a week and they were fine... Wonder if they just weren't noticed or if no one cared?
The only country I can think of that might create an issue is Saudi Arabia, where they specifically ask for your religion. That said, I know several Jews who have been there. They used the expedient measure of putting Christian as their religion despite an obviously Jewish surname.
