It depends where you are flying from. If you're in Dubai, and getting a flight to Sydney, remember that a lot of passengers will be connecting from Europe. Thus, they will have checked in a good 10 hours before you, and bagged all the good exit row seats from DXB.
The only time you can really guarantee a good seat is if you are originating at an outpost (eg. somewhere in Europe), and turn up very early. I always manage to get an exit row when I'm travelling from MAN-DXB as I'm there when check-in opens, and can check in at the business class desks. However, if I'm travelling DXB-MAN, the exit rows have normally already been taken by connecting passengers.
