I'm flying ORD-MAN from T5 and I guess it shouldn't be too busy as most people will be flying domestically or TO the US rather than flying away to countries where the holiday isn't celebrated?
Although I'm not this year, I almost always take off from ORD for LHR on Thanksgiving afternoon. The only problem I've ever had is that the access routes to the airport will be very crowded. Expect congestion getting into O'Hare, after that it will probably be more or less normal, especially at T5 where there is a much smaller number of flights.
