I think it would be a lot nicer just to go by yourselves than taking the tour. Hong Kong is one of the safest place in the world. And public transportation is superb. I have my own car and I don't want to drive it, except on Lantau island, for beach and temples access.
1. Lantau island is the best kept secret of HK: take the new cable car from Tung Chung to Ngon Ping. (I never try it before) Then walk up to the Big Buddha. And don't forget to visit the real and old temple, including the Jade Buddha. There is no entrance fee. The charge for HK$60 is for you to go inside the building and a so-so vege meal. If you don't want that meal, skip it. Big Buddha is just for sight only. Too fake for religious purpose. After finishing the round, take the No. 2 bus to Mui Wo. Walk toward the villages (to the Waterfall) and have meal on the water front restaurants. Then at sunset, take the ferry back to Central. Be sure to take the slow big ferry and pay for the Deluxe class so that you can sit outside the open deck. The view from Ngon Ping to Mui Wo is very nice, with authentic beaches along the shore. I usually get a lot of mussles, clams and crabs from there. Come to think of it, you can actually do this thing in reverse. Start from a nice ferry ride, (make sure that you can sit on the 3 deck "Ordinary" ferry) to Mui Wo,

2. Harbour Tour: it looks like a nice way to get on the water tour. However, the cheaper way would be just to take the Star Ferry from Central to Tsimshatsui or vice versa. Or take one from Tsimshatsui to Wanchai for the spectacular view of the harbour. At night, just walk around the Tsimshatsui water front for that stunning view. It never fail me. The night view of the Victoria Harbour from Kwoloon side is the best night view anywhere. My office is overlooking the whole Victoria harbour from East to West. But seeing the whole harbour is nothing as compared to that view from Kowloon side.
3. The Peak - the other must see view is to walk around the Peak. Not just the peak station, but go walk around the mountain. It has a nice trail that circles around the mountain with the unstopping view from Victoria Harbour to the West islands, then to South side.

p.s. just ignore that urgly IFC 2 building (88 stores), sitting obstructively in the middle, like a middle finger, as a reminder of a different kind of corruption inside the City Planning Commission. The British allows only two buildings both with 44 stores but the SAR government changed that design due to the greed of those people on that corrupted commission. What a shame!
