You are doing what we did and overthinking it! Just go online about a month before your trip and you'll be able to check the schedules and book the tickets without any problem. Even if you book online you will have to visit a travel agency in Athens and have them print out the actual tickets for you--there are plenty of instructions for this on the website.

There are no cabins, but business class is only a small price difference from coach and well worth it. My wife is also VERY sensitive to smoke and I don't think we noticed any smoke at all (I don't recall if it was non-smoking or not).
