Can only help with the last question I'm afraid. One of my favourite restaurants in AMS is Het Tuynhuys (http://www.tuynhuys.nl/) in Reduliersdwarsstraat). Had lunch again there on a recent ex-AMS flight and it is quiet but very nice.
