I would absolutely go via DEN. I commute to Seattle every other week and those midday and early evening DEN-SEA flights have had a very good track record for me. I can't recall a delay so far this year when I've been on those segments. (My pain with United this year has been almost entirely on the DEN-MCI evening segments, which have a lousy track record.)

I've only gone through ORD about 4 times this year. I'm 2 for 4 on delays on ORD-SEA. Both times were were talking about a 2-3 hour delay.

In optimal conditions, either routing is about 8 hours gate-to-gate. I'd err on the side of caution and go with DEN.
