I'm thinking that any airline not permitting this doesn't understand the technology.
I have the Nokia E62 (U.S.A. variant, made for Cingular) and the "Offline" profile disables both the GSM/GPRS and Bluetooth radios. If an FA were to ask whether it was in flight mode, the phone puts up an "X" where the cellular signal strength meter should be.
