Sadly, Symi not a beach lovers destination as AFAIK, it doesn't offer any noteworthy beaches I saw or read about in my guidebooks.
Mykonos closer to Athens which will allow you to spend the max. time on an island and it does offer good, if not S. Pacific paradise type beaches. It is fairly touristy and, depending on whom you believe, quite a major gay & lesbian destination.
Most of the beaches I saw on Thira (Santorini) and Mykonos are not the pure sand beaches but rather a more Mediterraen type rocky shore and would come as a surprise if you're used to Caribbean beaches, for example.
