Well, some people like an evening arrival in HKG. I think it's nice of CX to provide a choice.
And I think a nonstop would have to depart NYC at 2 or 3am to arrive in HKG in the morning. I don't think that's happening -- the folks in YVR I guess put up with it (they have choice too though, right?), but I don't see many NY biz travelers doing the same.
