At least one of the Popeye's Fried Chicken places does them in Austin. I went in to grab some chicken dinners on the Wednesday before Thanksgiving one year, and they had them lined up on the counter -- people were picking up their orders that evening, one or two at a time. Maybe you can find out if someone does it commercially in your area.

We usually crank up the Brinkmann smoker for the turkey, and I do the dressing separately in the oven. Sometimes I do gravy from turkey broth, but I find that the powdered mixes save me a lot of time. That, and I buy all my pies -- don't have the time or patience to bake my own when I'm doing the other dishes.
