You will go through immigration at AMS, but not customs (that is done after baggage claim). The poster above got it right -- you will have to go from the G pier to the B pier. The walk is not all that bad, but be sure not to lally-dag around in the great "see, buy, fly" shops in the main concourse.

You won't have to do anything at CDG unless there is a gate change and you have to change terminals. Same terminal and you're okay.
