Take the airtrain (assuming she's bagless) to Penn station. She can visit Macy's (briefly) right after getting to penn station, on her way to the empire state building at 34th and 5th avenue. After that, if the weather's nice, hop in a cab straight down 5th avenue to 23rd street and 5th avenue and see madison square park (site of the original madison square garden) and the flatiron building, and if there's some time and the line is short, grab a burger and a milkshake at shake shack - http://www.shakeshacknyc.com/ . then hop a cab back to penn station and reverse the air train. Might be a little tight if there's a line for the empire state building, but otherwise should work.
