On some of the various well-known pilot blogs, they have mentioned things like this before. One of them, a pilot based out of PHX noted differences on specific aircraft that he's flown before. Most of them however tend to be relative to when the aircraft was made and slight changes made on a 94 Airbus verus a 99 airbus (for example).

Another pilot blog that flies mostly smaller regional aircraft (prop) up in Northern canada focuses on that quite a bit more, but it's a smaller operation so with a smaller number of planes she notes that "this specific plane (reg) handles better in Y situation" or "this specifc plane has cockpit quirks x"
