Consider upmarket guesthouse/B&B type accomodation, these places will be smaller and not have all of the facilities bars etc required for hotels, but may be quiet and your room may be just as nice. Don't worry too much about air conditioning, just open the window during the day when you are away if you like, Spain is a long way south of Ireland and much warmer.
