So, I'm still sticking with crawfish being my #1, despite agreeing with a number of posts I've seen since I first posted in this thread. But, I have to ask whether any of y'all are familiar with a French dessert called
île flottante? I first had it in Nice, France, during a yearly conference that has since moved to Vienna, Austria. When done well, it's an AMAZING desert! However, I haven't been anywhere outside the south of France that does it justice.
I also wouldn't mind going back to Nice for some of that incredible gnocchi in beef sauce that I had that one evening ...

I know that this will be considered sacrilege to any New Mexicans out there, but I never understood the craze over Hatch chiles until I had some Hatch green chile enchiladas at one of the Chuy's in Austin, Texas (the one where the Bush twins got busted for underage drinking) during the Hatch Green Chile Festival. Those were pretty darned good, I tell you what.
