If what the charge you is what is different than what the copy of the bill you settled up against then you can have your CC company go after them.
While I agree it is most annoying to find these late charges I think having your CC company go after them as a first step is extreme. More often than not they are minibar charges which the hotel will remove without complaint. It is the nature of refilling these that they can't be restocked every time a guest departs, and it is possible that an incoming guest has removed some item which gets charged in error to your account after check out. Unless the hotel refuses to credit the charge there isn't any need to involve your cc company.
