Only possibilities:

1. Basic, fluffy, with tarragon, preferably fresh. Can sub herbs d' provance, but not as good.

2. With gouda, so it can be still sort of runny but not dangerously uncooked.

3. Okay, tarragon and gouda work.

4. With Victoria brand green salsa in the bottle (this is GOOD, but don't combine with above.)

5. If ordering from a restaurant, with ham period. Don't trust them with cheese unless you're fond of rubber.

Frittatas: Ah, there's another story and all the rules go out the window. You can put darn near anything in a frittata and it will taste great. Not so for omelets.

Quiche - a whole other story.
