The airline didn't make the rules - it's a dumb rule yes, and maybe they should find out a better way to not enforce it, but regardless it's the "idiot" who broke the rules and caused 100 people to have hours of their day wasted.
Is there anything to indicate an empty bottle wasn't taken on board the flight and then filled in-flight?

I know that I'm going to be carrying empty bottles on board the flight and I'll get them filled during the flight.

The party most responsible for this diversion in the face of a non-threat are some members of the flight crew. No one was holding a gun to their head; no one was even holding a bottle of water to their head. In any event, it seems like the crew could have used a cold shower to wake them up to the reality that a fluid being ingested by a passenger that doesn't cause near-immediate illness (or worse) does not pose a threat to the plane.
