All the flights I've been on since the new rules have had a pre-boarding announcement that carry-on beverages are prohibited. In addition, TSA has been doing random screening at gates. To answer your question, yes, AA and TSA really do care if you bring prohibited items on board. I assume that at a minimum they will take your bottle of water away. These days, who knows what else might happen to you.
