The Earth Cottages are quite nice - they are often taken over by bridal parties for a weekend, with one lot being used by the bride and her party and the other lot being used by the groom and his party. You will need to drive along a dirt road to get to them, which after heavy rain can be quite treachorous, most of the time it is passable with a normal sedan.

For an upper range property, you should be looking at somewhere like Lilianfels or Echoes. If that is out of your budget (Lilianfels is listed as one of the worlds great properties) then perhaps something like Peppers Fairmont, Dohertys Leura Gardens Resort, or the Mountain Heritage.

One option which might be a bit different would be the Megalong Valley farm.

Apologies for not supplying URL's, I am a bit rushed at the moment and want to get this post out quickly before I head back to work, they should all show up on Google though.
