I can offer you a few comments on the Wickaninnish Inn but haven't been to the Aerie nor Sooke Harbor House.
I took my wife (gf at the time) to the Wickaninnish Inn a few years back to propose. The hotel is excellent and I'm very happy I chose this location to pop the question. It has a very "naturey" west coast design (wood & glass). The ameneties in our room were excellent: very modern bathroom with soaker tub overlooking the ocean, very comfortable bed, Hudson Bay point blanket (
http://www.hbc.com/hbcheritage/history/blanket/), cd player with cd's, umbrella, boots, rain jackets, flashlight, (all for your walks on the beach), fireplace in the bedroom, etc. From the hotel, you step pretty much onto the beach. We were able to built a fire on the beach at night.
Service was excellent. The staff seemed fairly young but very eager to please.
Their Pointe Restaurant was very good food & service wise. The only minor complaint I could make is that their menu selection is fairly limited and wasn't completely to our taste. Our meals were still very good though.
I don't have too much to say about Tofino and Ucluelet. They had some nice shops but were definitely not key highlights of the trip. You go for the beaches and Pacific Rim National Park.
