The AUS PC bartenders have been outsourced for years. They actually work for a company that manages many airline clubs. I know they at least do Austin, DFW and Denver. There are several companies that do outsourcing for these clubs - the AUS Admiral's Club is run by a different one.

I agree that Charles in IAH is a great bartender. He always makes me smile, even on the worst travel days. I was bummed when he moved from Terminal E to C. I think the hours are better in C.
