60 minutes is definitely not correct. I have had co.com willing to sell me flights with as little as 30 minutes connecting time in IAH. I had heard somewhere that the official minimum connecting time in IAH is 25 minutes.
I try to have at least 60 minutes for a domestic connection, especially for late afternoon or evening connections.
The best CO will put in writing is "Minimum connecting times vary between airports. Please allow at least 45 minutes for a domestic connection and at least 90 minutes for an international connection."
