When my son was two years old he was happy anywhere that had a pool, a playground and/or a beach.

We took him to Vegas on his first birthday (because of my work) and he had a great time hanging out at the pool with dad or just sitting in the stroller checking out the city.

You can take kids almost anywhere as long as you can accomdate their basic needs ie: naps!! playtime and meals. Personally I think the part the kids like best is the amount of time they get to spend with mommy and daddy. So I would go along with those who say pick where you and your wife want to go, then just pick a hotel that will be kid friendly.
