I wouldn't worry about the water on Coex, it's always bottled water, usually Crytstal Geyser. We do not have water tanks onboard the EMB's except for the coffeemaker.

As stated, we are required to do a "full" beverage service every hour, hence the bar cart. If the flight is long, and time permits, I will also do a water service half and hour out for those who slept, or were otherwise distracted during the flight.
