We could leave a day earlier or I wonder how the flights on 9/1 look from ATL to AMS direct? Then we could just connect to KLM as planned...

Unfortunately 8/31 is bad for both JFK-ATH (BE has 0 availability even for sale) while ATL-ATH has 1 seat left. ATL-AMS (DL38) on 9/1 currently has 4 Z seats available while JFK-AMS (DL80) has 9 or more Z seats available. Both the JFK and ATL flights arrive AMS at about the same time so your connection to ATH on KL should be OK.
