To celebrate NAIDOC (National Aboriginal & Islander Day of Celebration) Week, we have been lucky enough to celebrate in style, with lots of 'bush tucker' made into delicious dishes.
I hadn't thought about making roo into a stew - it is tender and succulent, and wholesome, with mushroom, carrot and potato.
Wonderful winter food, as we acknowledge the custodians of this land in which we live ^^^
