I think what you have decided is actually quite good. Sounds of Silence Dinner is really good. Organise a sunrise tour for the Rock. The Olgas or whatever they call them now is about 30 minutes away from the rock and the rock is about 20 minutes from Ayers Rock resort.
For Alice Springs maybe a balloon flight might be an option. I think the Telegraph station is something worth seeing, its close to town. The desert park near Alice Spring is also good but I think that needs a couple of hours, and is not exactly near town.
The bus between the 2 places will show how big Australia is and how there is almost nothing out there.
