Yes SQ does offer GFML. Ex-SIN, you'd just get rice cakes instead of GF bread.
The meal is quite decent - but mind you , I was in Business Class.
At Changi Airport, just don't have any foods made with soya sauce as you know soya sauce contains wheat. You may have curries, satay as some of the local foods. Stick with the Indian, Malay foods. The only chinese dish I could have was Hainanese Chicken Rice - just tell them not to put the soya sauce over it. It's yummy with chilli.
If you do order food, just tell them you can't have wheat and soya sauce products. It's going to be hard.. but I survived. Bring your own tamari if you want soya sauce.
