I spent my first night in a picnic area of a caravan park because I arrived without any accommodations prebooked, and there was nothing to be found. The nice folks in the caravan park office gave me a pillow and blanket, though I didn't sleep much (a dingo kept walking around checking out the area I was in).
I've been out there twice, once directly to Ayers Rock for two nights, and the second time to Alice Springs, where I booked a 3 day tour to Ayers Rock, returning to Alice Springs. I thought the better experience was doing the road trip, as we stopped at Kings Canyon along the way, and overnighted nearby. The terrain along the way made it all worthwhile (used dirt tracks for a good part of the trip).
Take a look at this site and see if you can't find a one or two day tour out of Alice Springs:

It shows a number of one and two day tours from Alice Springs to Ayers Rock. If the weather is good, you really do want to sleep under the stars (some have tent accommodation), as I have never seen more stars than when I was out there.
