Really try to get more than 2 days if you plan on doing any hiking as there are so many good trails (not all long) at the spots you mention.
We LOVED our time in the outback.
Sunrise walk around Uluru, hiking in/through Kata Tjuta, hiking a wonderful trail at King's Canyon, sunrise balloon ride. Balloon ride and sunrise hike around Uluru were the only tour "guided" events we did while in the outback.
to note: we found some head netting to be of use around Kata Tjuta, not sure why but the flies there were prolific (we think because of some areas that didn't get any breeze/wind).
