I'd suggest going to Tanah Merah or Bedok by MRT, both just a few stops from Changi. Bedok has a huge bus interchange, while Tanah Merah has lots of buses passing it, including the aforementioned #2 service. Hop on board and it'll take you all the way across eastern Singapore through Bugis to Chinatown.
