This is technically just one stopover, but is there any way such a routing would work? In fact, ANA does it for 90,000 miles but can I get it for 60,000 miles on UA since that's how much their awards cost to Australia/NZ.

Either way should work, but you'll be hard pressed to enjoy a whole week in NZ. Keep in mind there are fifteen million sheep and one million people in NZ.
I'd suggest your original idea . . . fly to SYD and orbit around there before continuing on to MEL.
Australia's east coast is fun from top to bottom and everywhere in between.
